Yes. You can authorize the card up front and capture it after the work is done, so the money is committed before you start without charging for work you have not finished.

Do the before and after photos get shared with the customer?

You can share them through a portal link the customer opens without an account. They see the job and the photos you chose to share, and you can revoke the link any time.
